Method

Meatloaf Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Mix Meatloaf Ingredients

    In a large bowl, combine the ground beef, ground pork, chopped hatch green chiles, finely chopped onion, minced garlic, bread crumbs, eggs, salt, black pepper, cumin, and chili powder. Mix until just combined.

    Shape Meatloaf

    Transfer the meat mixture to a lined or greased loaf pan, shaping it into a loaf.

Mango-Chipotle Glaze Preparation

    Prepare Glaze

    In a small bowl, mix together the mango chutney, minced chipotle peppers, and lime juice. Set aside for later use.

Baking the Meatloaf

    Bake Meatloaf

    Place the meatloaf in the preheated oven. Bake for 45 minutes.

    Add Glaze

    After 45 minutes, remove the meatloaf from the oven and brush the mango-chipotle glaze generously over the top. Return to the oven and bake for an additional 15 minutes, or until cooked through.

Yukon Gold Mash Preparation

    Boil Potatoes

    In a large pot, add the chopped Yukon gold potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, and season with salt and black pepper to taste. Mash until smooth and creamy.

Cooking Seasonal Vegetables

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add the seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and black pepper to taste.

Shoestring Onion Preparation

    Fry Onions

    Dredge the thinly sliced onions in flour. Heat oil in a frying pan over medium-high heat and fry the onions until golden brown and crispy. Drain on paper towels.

Serving

    Plate and Serve

    Once the meatloaf is cooked, let it rest for 10 minutes before slicing. Serve slices of meatloaf with Yukon gold mash, sautéed seasonal vegetables, and top with crispy shoestring onions.
