Meatloaf Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Meatloaf Ingredients
In a large mixing bowl, combine ground beef, ground pork, diced Hatch green chiles, bread crumbs, the egg, finely chopped onion, minced garlic, cumin, salt, and black pepper. Mix until well combined.

Shape the Meatloaf
Transfer the meat mixture to a loaf pan and shape it into a loaf. Make sure it is evenly distributed.
Mango-Chipotle Glaze

Prepare the Glaze
In a small bowl, mix together the mango puree, minced chipotle in adobo sauce, brown sugar, and apple cider vinegar until smooth.

Glaze the Meatloaf
Spread half of the mango-chipotle glaze over the top of the meatloaf.
Bake the Meatloaf

Bake
Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).

Add More Glaze
During the last 10 minutes of baking, brush the remaining glaze over the meatloaf.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add zucchini, bell pepper, and carrots. Season with salt and black pepper, and sauté for about 7-10 minutes until tender.
Serving

Plate the Dish
Slice the meatloaf and serve with Yukon Gold mash, sautéed seasonal vegetables, and topped with crispy shoestring onions.
