Method

Meatloaf Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Meatloaf Ingredients

    In a large mixing bowl, combine ground beef, ground pork, diced Hatch green chiles, bread crumbs, the egg, finely chopped onion, minced garlic, cumin, salt, and black pepper. Mix until well combined.

    Shape the Meatloaf

    Transfer the meat mixture to a loaf pan and shape it into a loaf. Make sure it is evenly distributed.

Mango-Chipotle Glaze

    Prepare the Glaze

    In a small bowl, mix together the mango puree, minced chipotle in adobo sauce, brown sugar, and apple cider vinegar until smooth.

    Glaze the Meatloaf

    Spread half of the mango-chipotle glaze over the top of the meatloaf.

Bake the Meatloaf

    Bake

    Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).

    Add More Glaze

    During the last 10 minutes of baking, brush the remaining glaze over the meatloaf.

Yukon Gold Mash Preparation

    Boil Potatoes

    In a large pot, cover the cubed Yukon Gold potatoes with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Shoestring Onions

    Prepare the Onions

    In a bowl, toss the thinly sliced onions with flour, salt, and black pepper until well coated.

    Fry the Onions

    In a deep skillet, heat oil over medium-high heat. Fry the onions in batches until golden brown and crispy. Remove and drain on paper towels.

Seasonal Vegetables

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add zucchini, bell pepper, and carrots. Season with salt and black pepper, and sauté for about 7-10 minutes until tender.

Serving

    Plate the Dish

    Slice the meatloaf and serve with Yukon Gold mash, sautéed seasonal vegetables, and topped with crispy shoestring onions.
