Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water while mixing until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine the ground pork, chopped green cabbage, grated carrot, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

    Form the Potstickers

    After the dough has rested, divide it into small balls (about the size of a golf ball). Roll each ball into a thin circle (about 3 inches in diameter). Place a small amount of filling (about 1 tablespoon) in the center of each circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.

Cooking Potstickers

    Cook the Potstickers

    In a large skillet, heat a couple of tablespoons of oil over medium heat. Place the potstickers in the skillet, making sure not to overcrowd them. Cook for about 2-3 minutes until the bottoms are golden brown. Carefully add about 1/4 cup of water to the skillet and cover immediately. Steam for about 5 minutes until cooked through. Remove the lid and cook for an additional minute to crisp up the bottoms.

Dark Soy Glaze Preparation

    Make the Glaze

    In a small saucepan, combine dark soy sauce, brown sugar, and water. Bring to a simmer over medium heat, stirring until the sugar has dissolved. Reduce the heat and let it simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

Sriracha Sweet Chile Mayo Preparation

    Make the Sauce

    In a bowl, mix together mayonnaise, sriracha sauce, and sweet chili sauce until well combined. Adjust the spiciness to taste.
