Cook the Pasta
Bring a large pot of salted water to a boil. Add linguini and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken
While the pasta cooks, season the chicken breasts with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side or until cooked through and golden brown. Remove from heat and let rest, then slice into strips.

Prepare the Sauce
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 30 seconds until fragrant. Add the chopped hatch green chiles and sun-dried tomatoes, cooking for 2-3 minutes.

Combine Sauce and Pasta
Reduce the heat to low and stir in the heavy cream and red pepper flakes. Let simmer for 3-4 minutes until slightly thickened. Add the cooked linguini and sliced chicken to the skillet, tossing to coat evenly. Season with additional salt and black pepper to taste.
