Preparation of Ingredients

    Prepare the Chicken

    Cut the chicken breast into bite-sized pieces and season with salt and pepper.

    Chop the Vegetables

    Dice the red bell pepper, jalapeño, and red onion into small pieces.

Cooking the Dish

    Cook the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 400 ml of water, bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Make the Soy Glaze

    In a bowl, mix together the soy sauce, honey, minced garlic, and minced ginger until well combined.

    Cook the Chicken

    In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes until browned and cooked through.

    Add the Vegetables

    Add the diced red bell pepper, jalapeño, and red onion to the skillet with the chicken. Sauté for an additional 3-4 minutes until the vegetables are slightly softened.

    Combine with Soy Glaze

    Pour the soy glaze over the chicken and vegetables in the skillet. Sprinkle with red chile flakes. Stir well to coat everything evenly and cook for another 2-3 minutes until the sauce thickens slightly.

Serving

    Plate the Dish

    Serve the Mongolian chicken over a bed of jasmine rice. Garnish with additional red chile flakes, if desired.
