Method

Prepare the Cheese

  1. 1

    Mix Feta and Honey

In a small bowl, crumble the Tucumcari Mountain feta cheese. Drizzle the lavender honey over the crumbled feta and mix gently until well combined.

  2. 2

    Season with Pepper

Sprinkle fresh-cracked pepper over the feta and honey mixture to taste. Set aside.

Prepare Fresh Produce

  1. 3

    Slice Cucumbers

Wash the cucumber thoroughly. Slice it into thin rounds or half-moons, depending on your preference.

  2. 4

    Prepare Grapes and Olives

Rinse the grapes and olives under cold running water. Drain and set aside.

Make Hummus

  1. 5

    Blend Ingredients

In a food processor, combine the canned chickpeas, tahini, garlic clove, lemon juice, olive oil, salt, and water. Blend until smooth, adding more water if necessary to reach desired consistency.

  2. 6

    Taste and Adjust Seasoning

Taste the hummus and adjust seasoning with additional lemon juice, salt, or olive oil if desired.

Serve

  1. 7

    Arrange on Platter

On a serving platter, place the hummus in the center. Surround it with the cucumber slices, grapes, olives, and the feta-honey mixture.

  2. 8

    Add Pita Bread

Warm the pita bread slightly in a toaster or oven, then cut into quarters. Serve alongside the platter for dipping.
