    Prepare the Marinade

    In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, honey, salt, black pepper, and chopped dill or parsley until well combined.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fillets, ensuring they are well-coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes to 1 hour.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, about 375°F to 400°F (190°C to 200°C).

    Grill the Salmon

    Remove the salmon from the marinade and discard the marinade. Place the salmon fillets skin-side down on the grill. Grill for about 4-6 minutes on each side, depending on the thickness of the fillets, until the salmon is cooked through and flakes easily with a fork.

    Serve

    Remove the salmon from the grill and let it rest for a couple of minutes. Serve hot, garnished with additional fresh herbs if desired.
