Chicken Breast

Prepare the Chicken
Season the chicken breast with salt and black pepper on both sides.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken breast and sear for about 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and set aside.
Creamy Smoked Bacon & Mushroom Sauce

Cook the Bacon
In the same skillet, add sliced bacon and cook over medium heat until crispy. Remove bacon and drain on paper towels.

Make the Sauce
Add chicken broth and fresh thyme to the skillet. Bring to a simmer, then stir in heavy cream and grated Parmesan cheese. Cook for an additional 3-4 minutes until the sauce thickens. Crumble the cooked bacon and stir it back into the sauce.

Combine
Return the seared chicken breast to the skillet and coat it in the creamy sauce. Allow to simmer for another 2 minutes.

Serve
On a plate, serve the creamy chicken breast alongside a generous portion of Yukon Gold mash and sautéed seasonal vegetables. Drizzle additional sauce over the chicken if desired.
