Method

Chicken Breast

    Prepare the Chicken

    Season the chicken breast with salt and black pepper on both sides.

    Sear the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken breast and sear for about 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F). Remove from skillet and set aside.

Creamy Smoked Bacon & Mushroom Sauce

    Cook the Bacon

    In the same skillet, add sliced bacon and cook over medium heat until crispy. Remove bacon and drain on paper towels.

    Sauté Mushrooms and Garlic

    In the bacon drippings, add sliced mushrooms and minced garlic. Sauté until mushrooms are soft and browned, about 5-6 minutes.

    Make the Sauce

    Add chicken broth and fresh thyme to the skillet. Bring to a simmer, then stir in heavy cream and grated Parmesan cheese. Cook for an additional 3-4 minutes until the sauce thickens. Crumble the cooked bacon and stir it back into the sauce.

    Combine

    Return the seared chicken breast to the skillet and coat it in the creamy sauce. Allow to simmer for another 2 minutes.

Yukon Gold Mash

    Prepare the Potatoes

    In a large pot, add the cubed Yukon Gold potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

    Sauté the Vegetables

    In a separate skillet, heat olive oil over medium heat. Add the seasonal vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender-crisp.

Plating

    Serve

    On a plate, serve the creamy chicken breast alongside a generous portion of Yukon Gold mash and sautéed seasonal vegetables. Drizzle additional sauce over the chicken if desired.
