    Prepare the Filet Mignon

    Take the filet mignon out of the refrigerator and allow it to come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Meat

    Sprinkle both sides of the filet mignon with salt and black pepper evenly.

    Sear the Filet

    In a skillet, heat the olive oil over medium-high heat. Once hot, add the filet mignon to the skillet.

    Add Aromatics

    Add the crushed garlic cloves and rosemary to the skillet with the filet mignon.

    Cook the Filet

    Cook for about 4-5 minutes on each side for medium-rare, adjusting the time to your desired doneness. Baste the meat with the olive oil and juices in the pan while cooking.

    Rest the Meat

    Once cooked to your liking, remove the filet mignon from the skillet and let it rest for about 5-10 minutes before serving.

    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Place them in a pot of salted water and bring to a boil.

    Cook the Potatoes

    Boil the potatoes for about 15-20 minutes or until fork-tender. Drain and return to the pot.

    Mash the Potatoes

    Add milk and butter to the drained potatoes. Mash until smooth and creamy. Season with salt and cheese if desired.

    Prepare the Asparagus

    In a separate pan, melt 1 tablespoon of butter over medium heat. Add the asparagus and sauté for 4-5 minutes until tender.

    Season the asparagus with salt to taste and toss to coat before serving.
