Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it is hot enough to create the molten center.
- 2
Making the Cake Batter
- 3
Melt Chocolate and Butter
In a medium saucepan over low heat, combine the unsweetened chocolate and unsalted butter. Stir until melted and smooth, then remove from heat.
- 4
Mix Sugar and Eggs
In a mixing bowl, whisk together granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously until fully incorporated.
- 6
Add Dry Ingredients
Sift in the all-purpose flour and add a pinch of salt. Gently fold the dry ingredients into the batter until just combined.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be firm, but the center will still be soft.
- 9
Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute.
