Pork Chops Preparation

    Marinate the Pork Chops

    In a large bowl, combine the chimayo red chile powder, olive oil, garlic powder, salt, and black pepper. Add the duroc pork chops and coat them well with the marinade. Cover and let them marinate in the refrigerator for at least 30 minutes.

    Cook the Pork Chops

    Preheat a grill or skillet over medium-high heat. Remove the pork chops from the marinade and discard any leftover marinade. Grill the pork chops for 5-7 minutes on each side or until they reach an internal temperature of 145°F. Remove from heat and let them rest for 5 minutes before serving.

Yukon Gold Mash Preparation

    Boil the Potatoes

    Peel and chop the Yukon gold potatoes into quarters. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until they are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Seasonal Vegetables Preparation

    Prepare the Vegetables

    Wash and chop the seasonal vegetables into bite-sized pieces. Heat olive oil in a skillet over medium heat. Add the vegetables and sauté for about 5-7 minutes, or until they are tender but still crisp. Season with salt and black pepper to taste.
