Calamari

Sriracha Mayo

Method

Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat dry with paper towels.

  2. 2

    Set Up Breading Station

In three separate bowls, place flour mixed with salt and pepper, beaten eggs, and a mixture of breadcrumbs and grated Parmesan cheese.

  3. 3

    Bread the Calamari

Dredge each calamari ring in the flour mixture, dip in the eggs, and then coat with the breadcrumb and Parmesan mixture.

  4. 4

    Heat Oil

In a large pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  5. 5

    Fry the Calamari

Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Lemon-Basil Aioli

  1. 6

    Blend Ingredients

In a food processor, combine mayonnaise, fresh basil leaves, lemon juice, minced garlic clove, and salt.

  2. 7

    Process Until Smooth

Pulse until the mixture is smooth and well combined. Adjust seasoning if needed.

  3. 8

    Chill

Transfer the aioli to a bowl and refrigerate until ready to serve.

Sriracha Mayo

  1. 9

    Combine Ingredients

In a small bowl, mix together the mayonnaise and sriracha sauce until fully combined.

  2. 10

    Adjust Spiciness

Taste and adjust the amount of sriracha to your desired level of spiciness.
