Cooking the Rice

    Cook the Rice

    In a medium pot, bring 4 cups of water to a boil. Add 2 cups of white rice, cover, and reduce heat to low. Cook for 18-20 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

Making the Picadillo

    Sauté the Vegetables

    In a large skillet, heat a little oil over medium heat. Add diced onion and red bell pepper. Sauté until softened, about 5 minutes.

    Cook the Impossible Meat

    Add the Impossible meat and minced garlic to the skillet. Cook until browned, breaking up any large pieces, about 5-7 minutes.

    Add the Remaining Ingredients

    Stir in the tomato sauce, soy sauce, cumin, paprika, oregano, green olives, salt, and black pepper. Mix well and let it simmer for 10-15 minutes, allowing the flavors to meld.

Serving

    Assemble the Dish

    Serve the Picadillo over a bed of rice, and top with pickled onions and pickled peppers.
