Prepare wash
In a small jar combine 1 oz dry fortified wine and the piece of orange peel. Stir briefly, then cover and let rest at room temperature for 10 minutes to allow the citrus oils to infuse the wine. This creates the 'wash' that will give the Negroni a subtle fortified-wine note.

After 10 minutes, strain the wine through a fine mesh or coffee filter into a small measuring vessel to remove the peel and any sediment. Reserve the infused wine.
Assembling the Washed Negroni

Place a large ice cube into a chilled Old Fashioned glass.

In a mixing glass filled with ice, combine 1 oz gin, 1 oz Campari, and 1 oz sweet vermouth. Stir gently for 20–30 seconds until well chilled and slightly diluted.

Carefully strain the stirred Negroni over the large ice cube in the Old Fashioned glass.

Using a bar spoon, slowly pour the reserved 1 oz infused fortified wine down the inside of the glass so it 'washes' over the top of the cocktail. The idea is to create a thin layer and aroma of the wine rather than fully mixing it—this gives a perceptible fortified-wine note on the nose and first sips.

Express the orange twist over the surface of the cocktail to release oils, then rub the peel around the rim and drop it into the glass as garnish.
