Steamer Base

    Prepare date paste (if using whole dates)

    If you are using chopped medjool dates instead of date syrup, place the 3 chopped dates in a small bowl and cover with 2 tablespoons of hot water. Let sit 5 minutes, then mash into a smooth paste with the back of a spoon or briefly blitz with an immersion blender.

    Combine liquids and tahini

    In a medium saucepan, combine the milk and water over low-medium heat. Warm gently until just below simmering (do not boil). Whisk in the tahini until fully incorporated and the mixture is smooth, about 30–45 seconds.

    Sweeten and flavor

    Stir in date syrup (or the mashed date paste), brown sugar, vanilla extract, ground cardamom, and salt. Continue to whisk for 1–2 minutes until the sweeteners dissolve and the mixture is homogeneous and slightly thickened.

    Adjust consistency

    If the steamer seems too thick, add up to 2 tablespoons extra water or milk, a little at a time, whisking to incorporate. If too thin, simmer gently for 1–2 minutes to reduce and slightly thicken, stirring constantly to avoid scorching.

    Steam/heat through

    Keep the pan over low heat and let the mixture warm through for another 1 minute, whisking. Do not bring to a rolling boil. The final temperature should be hot enough to sip comfortably (about 150–160°F / 65–71°C if using a thermometer).

    Serve

    Pour the hot tahini date steamer into two warmed mugs (about 1 cup each).

Finish & Garnish

    Top each mug with a sprinkle of toasted sesame seeds and crushed pistachios. Add the pinch of cinnamon on top if using. If you prepared extra chopped medjool dates, spoon a few pieces on top for texture.

    Optional: For a frothier drink, transfer the hot steamer to a milk frother or use an immersion blender for 10–15 seconds before pouring to create light foam.

    Serve immediately while hot. Stir before drinking to reincorporate any settled tahini.
