Add the light brown sugar and fresh orange juice to the fruit. Gently toss with a spoon so sugar begins to dissolve and fruit releases juices. Let macerate at room temperature for 30 minutes, stirring once or twice; then refrigerate for at least 2 hours (up to overnight) to deepen flavor and create a rich, colorful syrup.

While fruit macerates, bundle the star anise, whole cloves and rosemary sprigs in a small spice sachet or cheesecloth to make removal easy. Lightly bruise the rosemary with the back of a knife to release oils.

If you prefer a stronger spice flavor, simmer the spice sachet with 120 ml of water and 30 ml of simple syrup for 5 minutes, then cool and refrigerate. Otherwise add the raw spice sachet directly to the keg/pitcher when combining the wine.
Assembling the sangria (for draft/keg service)

Strain the macerated fruit into a large bowl, reserving both the fruit and the liquid/syrup produced. Lightly press the fruit in the strainer to extract additional syrup but avoid crushing to pulp — you want whole fruit pieces for the draft return.

In a sanitized 5–6 liter draft keg or large beverage dispenser, combine 1.5 liters dry rosé wine, 120 ml orange liqueur, the reserved fruit syrup from maceration, and 120 ml chilled simple syrup (adjust to taste). Stir gently to combine.

Add the chilled sparkling water (750 ml) to the keg just before service to maintain effervescence. If using a CO2 draft system, connect and carbonate gently at low pressure (6–8 psi) to avoid over-fizzing; or use a counter-pressure carbonator set to produce a light sparkle.

Add the spice sachet (or cooled spice infusion) to the keg and then add the reserved macerated fruit pieces. Do not overfill — leave headspace for gentle agitation and dispensing.

Seal the keg and chill to 2–4°C (35–39°F) for at least 2 hours so flavors marry and the sangria is service cold. If you used a chilled spice infusion instead of raw spices, remove the sachet after 1–2 hours to prevent bitterness.
Draft finishing & service

To serve, gently rock the keg or dispenser to create a visual 'swirl' of fruit through the liquid, then use low-pressure dispense (or gravity if using a picnic tap) to pour about 360 ml (12 oz) per glass. Each pour should include some fruit.

Garnish each glass with a sprig of fresh mint or a small rosemary sprig and optionally a thin citrus wheel. If glassware is not pre-chilled, serve over one large ice cube to maintain temperature without quick dilution.

Keep the keg chilled and rotate contents every 24–36 hours for optimal freshness. Remove spent fruit after 48 hours; replenish with a small batch of fresh macerated fruit if continuing service.
