Cocktail Base

Method

Prepare Glass

  1. 1

    Rim (optional)

If you like a savory-salty rim, rub a lime wedge around the rim of a chilled Champagne flute and dip the rim briefly into flaky sea salt or Tajín. Set the flute aside in the refrigerator or on a plate.

Build the Cocktail Base

  1. 2

Add reposado tequila (1 oz), Aperitivo (1/2 oz), fresh lime juice (1/2 oz) and agave syrup (1/4 oz) into a cocktail shaker.

  2. 3

Fill the shaker with ice (enough to nearly fill; about 1 cup total across uses) and shake vigorously for 10–15 seconds until well chilled and slightly diluted.

  3. 4

Double-strain the shaken mixture into the prepared chilled Champagne flute, leaving space at the top for the sparkling wine (pour slowly to avoid splashing).

Top & Garnish

  1. 5

Carefully top the flute with chilled brut sparkling wine or Champagne (about 3 oz). Pour slowly so the cocktail gently fizzes rather than foaming over.

  2. 6

Express an orange twist over the glass to release the oils, then drop the twist into the drink. Add a lime wheel on the rim or float it inside as a complementary garnish.

  3. 7

Serve immediately while effervescent. If you rimmed the glass, remind guests to enjoy the salty-sour contrast as they sip.
