    Chill glass

    Place a martini glass (coupe or nick & nora) in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail.

    Optional absinthe rinse

    If using an absinthe rinse (for an herby aromatic lift as in some classic Don Ernesto interpretations), pour 1/4 tsp absinthe into the chilled glass, swirl to coat the inside, then discard the excess. Set glass aside to dry briefly.

    Combine spirits and bitters

    Fill a mixing glass or cocktail shaker with plenty of ice. Add 2.5 oz gin, 0.5 oz dry vermouth and 2 dashes orange bitters.

    Stir to chill and dilute

    Using a long-handled bar spoon, stir the mixture briskly for 20–30 seconds (about 15–20 full turns) until the outside of the mixing glass feels very cold and a small amount of dilution has occurred.

    Strain

    Discard the ice or water from the chilled martini glass if you used it to chill. Double-strain or fine-strain the stirred martini into the chilled glass using a julep strainer and a fine mesh strainer if available to catch any shards.

Garnish & finish

    Express the oils from one lemon peel over the surface of the martini by holding the peel over the glass and giving it a quick snap so the oils spray onto the drink, then rub the peel around the rim and drop it in. Alternatively, garnish with one large green olive on a pick. Serve immediately.
