Place the cream cheese in a small bowl and soften with a spoon or rubber spatula until smooth and spreadable, about 1–2 minutes.

Make two spread options: For Classic Cream Cheese Schmear, keep half of the softened cream cheese plain (4 oz). For a zesty schmear, to the remaining 4 oz cream cheese add 1 tbsp Dijon mustard and 1 tsp prepared horseradish; mix until uniform.

Combine the whole-grain mustard and mayonnaise in a separate small container to create a mustard-mayo spread; stir until smooth. If you like sweeter notes, whisk in 1 tsp honey to a portion of the mixture.
Corned Beef Assembly

If the corned beef is cold from the fridge, fold or pile slices and warm gently: place the sliced corned beef in a microwave-safe dish, cover loosely with a damp paper towel, and microwave in 20–30 second bursts until just warm (do not overcook). Alternatively, warm in a skillet over medium-low heat for 1–2 minutes, pressing lightly to heat through.

If using cheese, place a slice on the warm corned beef for 10–20 seconds to soften/melt slightly.

Build the Sandwiches
