Method

Prepare Clay Pot

  1. 1

    Soak and rinse

If the clay cup is unglazed, rinse it thoroughly, then submerge in warm water for 5–10 minutes to allow the pot to absorb moisture. This reduces cracking and prevents the clay from drawing excessive flavor from the cocktail. Drain and pat the outside dry; leave the interior slightly damp.

  2. 2

If using a glazed clay vessel, simply rinse with warm water and dry the exterior; no soaking is required.

Build the Negroni

  1. 3

    Chill the vessel (optional)

If you prefer a colder drink, place the damp clay pot in the freezer for 10–15 minutes or set it on a bed of crushed ice for 2–3 minutes. Remove just before pouring.

  2. 4

    Add ice

Place the 3 large ice cubes (or the 1/2 cup crushed ice if using for presentation) into the clay pot. The large cubes will melt more slowly and keep the drink balanced.

  3. 5

    Measure and pour

Measure 1 oz gin, 1 oz Campari, and 1 oz sweet vermouth. Pour each spirit directly over the ice in the clay pot. Pour slowly to minimize splashing and ensure even chilling.

  4. 6

    Stir

Using a small bar spoon or stirrer, gently stir the mixture for 20–30 seconds. Aim for about 15–20 revolutions to properly dilute (approximately 10–15% dilution) and chill the cocktail. Stirring in the clay pot will slightly mute aromatics compared with a glass, so be deliberate but gentle.

  5. 7

    Express garnish

Take the orange peel and hold it over the drink with the outside facing down. Give a firm twist to express oils across the surface of the cocktail, then rub the peel around the rim of the clay pot and drop it into the drink as garnish.

Serve

  1. 8

Place the clay pot on a small saucer or coaster to catch any condensation. Serve immediately. Because clay is slightly porous, the drink may feel earthier and slightly cooler than in glass; advise guests to sip slowly to appreciate the texture and aroma.

  2. 9

If you soaked the clay vessel before serving, note that additional dilution can occur over time—encourage finishing within 15–20 minutes for best balance.
