    Prepare bagels

    Slice 6 bagels horizontally in half. If desired, lightly toast them just until warm and golden (3-4 minutes). Arrange toasted and untoasted halves on a large platter, grouping halves together for easy sandwich assembly.

    Prepare spreads

    Place plain cream cheese, dill/chive cream cheese (if using), and softened butter into separate small bowls. Stir the dill into one bowl of cream cheese if you didn’t buy flavored. Drizzle olive oil into the butter and mix to make it easily spreadable. Place small spread knives for each bowl on the platter.

    Arrange proteins

    On a second serving tray or alongside bagel halves, fan out smoked salmon (12 oz) in overlapping slices. Neatly fold or stack 12 oz turkey and 12 oz ham on separate piles. Keep proteins chilled until serving; place smoked salmon on a bed of lettuce or parchment to prevent sticking.

    Prepare eggs

    Peel 6 hard-boiled eggs and slice each into halves or thick rounds. Arrange on a small dish and sprinkle with a pinch of kosher salt and black pepper. Optionally, finely chop 2 tablespoons fresh dill and sprinkle over the eggs.

    Arrange 8 slices cheddar and 8 slices Swiss/provolone on the platter, fanning slightly so guests can grab slices. Keep cheese near bagels for easy assembly.

    Thinly slice 1 cup red onion, 2 tomatoes, and 1 cup cucumber. Place vegetables in small piles or bowls. Put 3 tablespoons capers in a small bowl. Tear 8 lettuce leaves and arrange them on the platter. Season tomato and cucumber lightly with a pinch of salt and pepper to enhance flavor if desired.
