Roast the eggplants
Preheat oven to 450°F (230°C). Prick each eggplant several times with a fork. Lightly brush with 1 tablespoon olive oil and place on a rimmed baking sheet lined with foil. Roast on the middle rack, turning once or twice, until the skin is charred and the flesh is very soft, 30–40 minutes depending on size.

When cool enough to handle (10 minutes), slice each eggplant and scoop the flesh into a colander set over a bowl. Let drain for 10–15 minutes, pressing gently to remove excess liquid; discard liquid. This prevents a watery dip.

Prepare base and blend
Transfer drained eggplant flesh to a cutting board and chop roughly, or place into a food processor. Add tahini, lemon juice, garlic cloves, remaining 1 tablespoon olive oil, pomegranate molasses, ground cumin, kosher salt, and black pepper. Pulse or mash to your preferred texture: 6–10 pulses in food processor for a slightly chunky, creamy baba ghanoush; blend longer for very smooth. Taste and adjust seasoning: add more lemon for brightness, more pomegranate molasses for sweet-tart depth, or up to 1/2 tsp additional salt if needed.

Assemble and finish
Spread the baba ghanoush into a shallow serving bowl, creating a slight well in the center. Drizzle the remaining 1 tablespoon (or more to taste) extra-virgin olive oil over the top. Sprinkle chopped pistachios evenly, scatter pomegranate seeds, and dot with chopped parsley. Finish with a light dusting of smoked paprika or Aleppo pepper if using.

If you like, drizzle an additional 1/2–1 tsp pomegranate molasses over the top for a glossy, tangy finish.

Serve at room temperature with warm pita wedges and lemon wedges on the side. Baba ghanoush can be made up to 24 hours ahead; cover and refrigerate, then bring to room temperature and stir gently before serving. If it thickens, stir in 1–2 teaspoons olive oil or lemon juice to loosen.
