Smoked sable

    Prepare fish

    If your smoked sable is in a larger piece, slice it thinly against the grain into bite-size or sliver pieces (about 1/8"–1/4" thick). Keep slices cold on a chilled plate.

    Dress the fish

    In a medium bowl combine the lemon juice, olive oil, chopped chives and capers. Whisk briefly to emulsify. Add the smoked sable slices and toss gently to coat, taking care not to break the flesh. Let sit 2–3 minutes so acid and oil slightly meld with the fish.

    Season

    Season the dressed sable with the sea salt and freshly ground black pepper to taste. Taste one piece and adjust lemon or salt as desired — smoked sable can be salty, so add salt sparingly.

    Plate and garnish

    Arrange the slices on a serving plate or on individual toasts. Scatter microgreens or baby arugula over the top for freshness. If using, dot or serve crème fraîche alongside and place thin baguette slices or blini nearby.

    If serving toasted baguette rounds, lightly toast or griddle slices until golden. Spread a small spoonful of crème fraîche on each toast, then top with a slice of dressed sable and finish with a chive snip or caper.
