Smoked Trout Roe Garnish

    Prepare roe and accompaniments

    Keep the smoked trout roe chilled until just before plating. Measure 1/2 oz per serving and place gently in a small chilled bowl. If using microgreens, rinse and spin dry; reserve a small pinch per serving.

    Seasoning

    In a very small bowl, combine lemon zest, lemon juice, olive oil, a pinch (about 1/8 tsp) fine sea salt and a scant pinch of freshly ground black pepper. Stir gently to combine. This light dressing brightens the roe without overpowering it.

    Assemble on serving vessel

    Place the crostini or blini on the plate. Spoon the 1/2 oz smoked trout roe onto the center of each crostini/blini using the back of a small spoon — handle the roe gently to keep the eggs intact. If plating on another dish (e.g., atop a savory tart, potato pancake or chilled seafood), mound the roe in a small quenelle or loose pile where it will be visible.

    Finish and garnish

    Lightly brush or drizzle the prepared lemon-olive oil dressing around (not over) the roe — a few drops on the base to add brightness. Top with a small pinch of microgreens and 1–2 tiny dill sprigs. Finish with an extra tiny pinch of fine sea salt if desired. Serve immediately to preserve texture and temperature contrast.

    Optional pairing note: Serve chilled and consume right away. Smoked trout roe pairs well with neutral crackers, toasted brioche, crème fraîche, or simple boiled baby potatoes.
