Potato Chips

Method

Preparing the Potatoes

  1. 1

    Wash and Slice Potatoes

Wash the Russet potatoes thoroughly under cold running water to remove any dirt. Using a mandoline or sharp knife, slice the potatoes into thin rounds, about 1/8 inch thick.

  2. 2

    Soak the Slices

Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and ensure crispiness.

Frying the Chips

  1. 3

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

  2. 4

    Dry the Potatoes

After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

  3. 5

    Fry the Chips

Carefully add a handful of potato slices to the hot oil, being cautious not to overcrowd the pot. Fry for about 3-5 minutes or until they turn golden brown and crispy.

  4. 6

    Drain and Season

Using a slotted spoon, remove the chips from the oil and drain them on paper towels. Immediately sprinkle with salt while they are still hot.

Making the Seasoning Blend

  1. 7

    Combine the Spices

In a small bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, black pepper, sugar, dried oregano, dried thyme, and cumin until well combined.

  2. 8

    Add Seasoning to Chips

Once the chips are drained and still warm, sprinkle the seasoning blend over them, tossing gently to ensure even coverage.
