Soak the Potato Slices
Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch and help them crisp up during frying.

Dry the Potato Slices
After soaking, drain the water and pat the potato slices dry with paper towels to remove excess moisture.
Frying the Chips

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
