Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a spatula. Allow the rice to cool to room temperature.

Prepare Fillings

    Slice the Fish

    Using a sharp knife, slice the yellowtail fish into thin strips, approximately 1/4 inch thick.

    Prepare Vegetables

    Cut the avocado in half, remove the pit, and slice it into thin strips. Peel the cucumber and slice it into thin matchsticks.

Assemble Sushi

    Roll the Sushi

    Place a bamboo sushi mat on a clean surface. Lay the nori sheet shiny side down on the mat. Wet your hands to prevent sticking and take about a handful of sushi rice. Spread the rice evenly over the nori, leaving a 1-inch border at the top. Arrange yellowtail, avocado, and cucumber over the rice.

    Form the Roll

    Using the mat, lift the edge closest to you and begin to roll it away from you, applying gentle pressure. Roll tightly until you reach the bare edge of the nori. Wet the edge with a little water to seal the roll.

    Slice the Sushi

    Using a sharp knife, slice the roll into 2 equal pieces. Wipe the knife with a damp cloth between cuts to ensure clean edges.

Serve

    Plate and Serve

    Arrange the sushi pieces on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
