Kombucha Base Preparation

Boil Water
In a large pot, bring 8 cups of water to a boil.

Add Sugar
Once the water is boiling, add 1 cup of sugar and stir until fully dissolved.

Brew Tea
Remove the pot from heat and add the 8 black tea bags. Allow to steep for 10-15 minutes.

Cool the Tea
After steeping, remove the tea bags and let the sweetened tea cool to room temperature.

Cover and Ferment
Cover the jar with a clean cloth and secure it with a rubber band. Let it sit in a warm, dark place for 7-14 days.

Prepare Ginger
While the kombucha ferments, peel and finely grate 4 tablespoons of fresh ginger root.

Combine with Honey
In a small bowl, mix the grated ginger with 1 tablespoon of honey until well combined.
Bottling

Remove SCOBY
After 7-14 days, taste the kombucha. Once it reaches your desired level of tartness, remove the SCOBY and set it aside.

Flavor the Kombucha
Add the ginger-honey mixture to the kombucha and stir gently to combine.

Bottle the Kombucha
Using a funnel, pour the flavored kombucha into clean bottles, leaving about an inch of headspace at the top.

Second Fermentation
Seal the bottles and let them sit at room temperature for 3-7 days for carbonation. Check daily to avoid over-carbonation.

Once carbonated to your liking, refrigerate the bottles to halt fermentation. Serve chilled.
