    Boil Water and Prepare Tea

    In a large pot, bring 4 cups of water to a boil. Once boiling, remove from heat and add the 4 black tea bags. Allow the tea to steep for about 15 minutes.

    After steeping, remove the tea bags and stir in 1 cup of granulated sugar until fully dissolved. Allow the tea mixture to cool to room temperature.

    Once cooled, add 1 cup of starter tea to the sweetened tea mixture.

    Combine with SCOBY

    Pour the mixture into a large glass jar and carefully add the SCOBY. Cover the jar with a breathable cloth secured with a rubber band to prevent contamination while allowing airflow.

First Fermentation

    Ferment

    Place the jar in a warm, dark place for 7 to 14 days, depending on your taste preference. Check the kombucha periodically; it should become tangy and slightly effervescent.

Flavoring

    Prepare Flavoring

    After the first fermentation, remove the SCOBY and set it aside in a clean container. In a blender, combine 1 cup of fresh blueberries and 2 tablespoons of dried jasmine flowers. Blend until smooth.

    Mix with Kombucha

    Strain the blueberry and jasmine mixture through a fine mesh sieve to remove solids. Combine the strained liquid with the fermented kombucha. If desired, add 2 tablespoons of honey for sweetness and mix well.

Second Fermentation

    Bottle Kombucha

    Pour the flavored kombucha into clean glass bottles, leaving some space at the top for carbonation. Seal the bottles tightly.

    Let the bottles sit at room temperature for an additional 3 to 7 days to enhance carbonation. Check the bottles daily to release pressure if needed.
