Method

Preparation

    Prepare the Salad Base

    In a large salad bowl, add the fresh spinach as the base.

    Add Lentils

    Add the cooked lentils evenly over the spinach.

    Prepare Vegetables

    Chop the cherry tomatoes in half, dice the cucumber, and finely slice the red onion. Add them to the salad bowl.

    Add Falafel

    Slice or crumble the falafel balls and place them on top of the salad.

    Add Burrata

    Tear the burrata cheese into smaller pieces and distribute them evenly on top of the salad.

    Add Pumpkin Seeds

    Sprinkle the pumpkin seeds over the salad for added crunch.

Hummus Preparation

    Prepare Harissa Hummus

    In a food processor, combine the harissa paste, tahini, garlic, lemon juice, water, olive oil, and salt. Blend until smooth and creamy.

Vinaigrette Preparation

    Make the Lemon Herb Vinaigrette

    In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until well combined.

Assembly

    Assemble the Salad

    Drizzle the lemon herb vinaigrette over the salad and gently toss to combine all ingredients.

    Serve with Hummus

    Serve the salad with a side of harissa hummus for dipping.
