Dough Preparation

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes foamy.

Prepare the Dough
In a large mixing bowl, combine all-purpose flour and salt. Add the foamy yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

Prepare the Vegetables
While the dough is rising, slice the mushrooms and halve the cherry tomatoes. Rinse the fresh spinach and set aside.

Preheat the Oven
Preheat your oven to 475°F (245°C) to ensure it's hot enough for a crispy crust.
Assembling and Baking

Roll Out the Dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

Transfer the rolled-out dough to a pizza stone or baking sheet. Brush with garlic-basil oil. Evenly spread mozzarella cheese over the dough, followed by mushrooms, spinach, and cherry tomatoes. Sprinkle with black pepper and additional salt if desired.

Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
