Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until foamy.

Mix Dough Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assemble Pizza

Preheat Oven
Preheat your oven to 475°F (245°C).

Add Toppings
Spread the ricotta cheese evenly over the dough. Tear the fresh mozzarella into pieces and scatter them on top. Sprinkle Grana Padano cheese over the mozzarella. Drizzle with tomato sauce.

Bake Pizza
Bake in the preheated oven for 20-25 minutes or until the crust is golden brown and the cheese is bubbly.

Cool and Serve
Remove from the oven and let it cool for a few minutes before inverting onto a serving platter. Drizzle with additional garlic-basil oil and serve hot.
