Prepare Sushi Rice

Rinse the Rice

Begin by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice

In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 20 minutes.

Season the Rice

Once cooked, remove from heat and let it sit covered for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the rice using a wooden spatula.

Prepare Tuna Filling

Slice the Tuna

Cut the fresh sushi-grade tuna into thin slices, about 1/4 inch thick.

Mix with Soy Sauce and Wasabi

In a small bowl, combine the tuna slices with soy sauce and wasabi, gently tossing to coat.

Assemble Sushi

Prepare Nori

Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Spread Rice

Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add Tuna

Place the seasoned tuna slices in a line across the center of the rice.

Roll Sushi

Using the bamboo mat, roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a bit of water.

Cut and Serve

Using a sharp knife, slice the roll into 2 pieces. Optionally, sprinkle sesame seeds on top before serving.
