Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook Rice
In a medium saucepan, combine the rinsed sushi rice and 1.25 cups of water. Bring to a boil over medium heat.

Simmer Rice
Once boiling, reduce heat to low, cover, and let simmer for 18-20 minutes until the rice is tender and water is absorbed.

Let Rest
Remove from heat and let sit, covered, for 10 minutes. Then, transfer to a bowl.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Drizzle over the rice and gently fold to combine.
Prepare Salad and Tofu

Prepare Tofu
Press the tofu for 15 minutes to remove excess moisture. Cut into 1-inch cubes.

Sauté Tofu
In a non-stick skillet over medium heat, sauté the tofu cubes until golden brown on all sides, about 8-10 minutes.

Combine Ingredients
In a large bowl, combine the sautéed tofu, cucumber slices, edamame, and avocado cubes.
Make Poke Sauce

Mix Poke Sauce
In a small bowl, whisk together soy sauce, sesame oil, Sriracha, and lime juice until well combined.
Assemble Tofu Poke

Layer Ingredients
In serving bowls, layer a scoop of sushi rice, followed by the tofu salad mixture.

Add Sauce and Garnish
Drizzle the poke sauce over the top and sprinkle with sesame seeds.
