Prepare the Sushi Rice

Rinse the rice
Place the sushi rice in a fine mesh strainer and rinse it under cold water until the water runs clear. This removes excess starch.

Cook the rice
In a medium saucepan, combine the rinsed sushi rice and 1.5 cups of water. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender.

Season the rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it cool slightly. Gently fold the vinegar mixture into the rice without mashing it.
Prepare the Vegetables

Slice the cucumber
Cut the cucumber in half lengthwise, then slice it into thin half-moon shapes.

Prepare the edamame
If using frozen edamame, cook according to package instructions until tender, then drain and set aside.

Slice the avocado
Cut the avocado in half, remove the pit, and slice the flesh into thin slices.
Make the Poke Sauce

Combine sauce ingredients
In a small bowl, whisk together soy sauce, sesame oil, sriracha, and honey until well blended.
Assemble the Super Poke

Drizzle with sauce
Drizzle the poke sauce over the top of the assembled ingredients.

Garnish
Sprinkle sesame seeds on top for added flavor and texture.
