Method

Preparing the Steak

  1. 1

    Season the Steak

Generously season both sides of the ribeye steak with salt and black pepper. Allow it to sit at room temperature for about 30 minutes to enhance the flavor.

  2. 2

    Preheat the Pan

Heat a large skillet over medium-high heat, and add 2 tablespoons of olive oil. Allow it to heat until shimmering.

  3. 3

    Sear the Steak

Once the oil is hot, carefully place the seasoned steaks in the pan. Sear for about 4-5 minutes on one side until a crust forms.

  4. 4

    Add Garlic and Rosemary

Flip the steaks over and add garlic cloves and fresh rosemary to the pan. Cook for another 4-5 minutes for medium-rare, adjusting time for desired doneness.

  5. 5

    Baste with Butter

Add the butter to the pan and tilt the pan to let the melted butter pool. Use a spoon to baste the steaks with the butter, garlic, and rosemary for added flavor.

  6. 6

    Rest the Steak

Remove the steaks from the pan and let them rest on a cutting board for at least 5 minutes before slicing to allow the juices to redistribute.

Cooking Optional Sides

  1. 7

    Prepare Asparagus

While the steak is resting, trim the ends of the asparagus. Steam or sauté in olive oil with a pinch of salt for about 5 minutes until tender.

  2. 8

    Roast Potatoes

Preheat the oven to 400°F (200°C). Cut the potatoes into wedges, toss with olive oil, salt, and pepper, and roast for 25-30 minutes until crispy.
