Pastry Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut the cold unsalted butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Form the dough into a ball, then flatten it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
