Method
Pastry Preparation
- 1
Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Cut the cold unsalted butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
- 2
Add Water
Gradually add the ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. Form the dough into a ball, then flatten it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Filling Preparation

- 4
Cook the Spinach
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- 5
Mix the Filling
In a large bowl, combine the sautéed spinach and onion mixture with feta cheese, black pepper, and the egg. Mix well until combined.
Assembly and Baking
- 6
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 7
Roll Out the Dough
On a floured surface, roll out the chilled dough into a large rectangle, about 1/8 inch thick. Cut into squares or circles based on your preference.
- 8
Fill and Shape the Pastries
Place a generous spoonful of the filling in the center of each dough piece. Fold the pastry over to create a triangle or a half-moon shape. Seal the edges by pressing with a fork.
- 9
Bake the Pastries
Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.
