Method

Prepare Sushi Rice

    Rinse Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat.

    Steam Rice

    Once boiling, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon or spatula. Allow the rice to cool to room temperature.

Make Spicy Mayo

    Prepare Spicy Mayo

    In a small bowl, combine mayonnaise, Sriracha sauce, lemon juice, and soy sauce. Mix until well combined.

Assemble the Roll

    Prepare Nori

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

    Spread Rice

    With damp hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Drizzle some spicy mayo over the rice, then add slices of fresh tuna, cucumber, and avocado in a line across the center of the rice.

    Roll Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight.

    Slice and Serve

    Once rolled, use a sharp knife to slice the roll into 6-8 pieces. Sprinkle sesame seeds on top if desired.
