Prepare the Chicken
Begin by preheating your grill or skillet over medium-high heat. Season the chicken breasts with olive oil, salt, black pepper, paprika, and cumin on both sides.

Cook the Chicken
Grill or sear the chicken breasts for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 75°C (165°F). Remove from heat and let rest for 5 minutes before slicing.

Prepare the Corn
If using canned corn, drain and rinse. If using frozen roasted corn, thaw according to package instructions. Set aside.

Assemble the Pita
Warm the pita bread in a skillet or microwave for a few seconds until pliable. Open each pita pocket carefully.

Fill the Pita
Start by spreading a layer of mashed avocado inside each pita. Next, add sliced chicken breast, followed by roasted corn. Crumble goat cheese on top if using.

Add Harissa
Drizzle citrus harissa inside each pita over the fillings. Adjust the amount to your spice preference.
