Prepare the Chicken
In a large bowl, combine the chicken thighs with olive oil, salt, black pepper, garlic powder, and paprika. Mix until the chicken is well coated. Let marinate for at least 30 minutes.

Prep the Vegetables
While the chicken is marinating, dice the avocados and set aside. If the roasted corn is frozen, heat it in a pan until warm and set aside. Crumble the goat cheese.

Prepare Pickled Fresnos
If using whole pickled fresnos, slice them into rings for better distribution over the chicken.

Cook the Chicken
Heat a large skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes on each side, or until the chicken is browned and cooked through (internal temperature should reach 165°F).

Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Slice the chicken and arrange it on a serving platter. Top with diced avocado, roasted corn, crumbled goat cheese, and pickled fresnos.
