Preparing the Salmon

Preheat and Season
Preheat your grill or oven to 400°F (200°C). Pat the salmon fillets dry with a paper towel. In a small bowl, mix olive oil, salt, and black pepper. Brush this mixture onto both sides of the salmon fillets.

Cook the Salmon
Place the salmon fillets on the grill or a baking sheet if using the oven. Grill or bake for about 12-15 minutes, or until the salmon flakes easily with a fork.
Making the Spice Mayo

Combine Ingredients
In a medium bowl, combine mayonnaise, Sriracha sauce, lemon juice, smoked paprika, and garlic powder. Mix well until all ingredients are thoroughly incorporated.

Adjust Seasoning
Taste the spice mayo and adjust seasoning if needed. You can add more Sriracha for heat or more lemon juice for acidity.
Serving

Plate the Dish
Once the salmon is cooked, remove it from the grill or oven and let it rest for a few minutes. Serve the salmon warm with a generous dollop of spice mayo on top or on the side.
