Method

Roll Preparation

    Make the Dough

    In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.

    Add Ingredients

    Mix in flour, salt, and olive oil until a dough forms. Knead for about 10 minutes until smooth.

    First Rise

    Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.

    Shape Rolls

    Punch down the dough and divide it into 8 equal pieces. Shape each piece into a long roll.

    Second Rise

    Place rolls on a baking sheet, cover, and let rise again for 30 minutes. Preheat oven to 375°F (190°C).

    Prepare for Baking

    Brush the tops of the rolls with olive oil and sprinkle with sesame seeds.

    Bake

    Bake for 20-25 minutes or until golden brown.

Filling Preparation

    Prepare Broccoli Rabe

    Trim the ends of the broccoli rabe and blanch it in boiling water for 2-3 minutes. Drain and chop.

    Sauté Filling

    In a skillet, heat 2 tbs of olive oil over medium heat. Add minced garlic and sauté until fragrant.

    Combine Ingredients

    Add chopped broccoli rabe and roasted pork to the skillet. Season with salt and pepper. Stir until heated through.

    Add Cheese

    Remove from heat and fold in sharp provolone cheese until melted and well combined.

Cream Sauce Preparation

    Make the Sauce

    In a saucepan, melt butter over medium heat. Stir in heavy cream and garlic powder.

    Add Cheese

    Add parmesan cheese and salt. Stir continuously until the sauce thickens, about 5 minutes.

    Simmer

    Reduce heat to low and let the sauce simmer until ready to serve.

Assembly

    Fill Rolls

    Once the rolls are baked and cooled slightly, slice them open lengthwise and fill with the pork and broccoli rabe mixture.

    Serve

    Drizzle the hot cream sauce over the filled rolls and serve immediately.
