Dough Preparation

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

    In a large bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare Broccoli Rabe

    Blanch the broccoli rabe in boiling water for 2-3 minutes, then drain and chop into bite-sized pieces.

    In a skillet over medium heat, cook the Italian sausage until browned and fully cooked, breaking it into small pieces. Set aside.

    Slice the long hot peppers thinly, removing seeds if desired for less heat.

Pizza Assembly and Baking

    Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

    Once the dough has risen, punch it down and stretch or roll it into a rectangle on a floured surface.

    Transfer the dough to a parchment-lined baking sheet. Layer with mozzarella cheese, cooked sausage, broccoli rabe, sliced long hot peppers, and a drizzle of chili crisp.
