Method

Preparing the Shrimp

  1. 1

    Season the Shrimp

In a mixing bowl, combine the shrimp with olive oil, garlic powder, chili powder, salt, and black pepper. Toss until the shrimp are evenly coated.

  2. 2

    Cook the Shrimp

Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side or until they are opaque and cooked through. Remove from heat and set aside.

Making Jalapeño Green Goddess

  1. 3

    Blend the Ingredients

In a blender, combine chopped jalapeños, parsley, chives, Greek yogurt, lemon juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning if necessary. Set aside.

Preparing Pico de Gallo

  1. 4

    Combine Ingredients

In a bowl, mix diced tomatoes, red onion, cilantro, lime juice, and salt. Stir gently to combine. Allow to sit for at least 10 minutes for flavors to meld.

Assembling the Tacos

  1. 5

    Warm the Tortillas

In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.

  2. 6

    Fill the Tacos

On each tortilla, add a portion of the cooked shrimp, a dollop of jalapeño green goddess, and a spoonful of pico de gallo. Top with passionfruit pulp.

  3. 7

    Serve

Serve the tacos immediately while warm. Enjoy!
