Making the Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, instant yeast, and salt. Mix well.

    Add Wet Ingredients

    In a separate bowl, whisk together milk, melted butter, eggs, and vanilla extract. Pour this mixture into the dry ingredients and mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Shape into a ball and place in a greased bowl, covering it with a damp cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Layering the Butter

    Prepare the Butter Layer

    While the dough is rising, prepare the cold butter. Place it between two sheets of parchment paper and roll it out into a rectangle about 1/2 inch thick.

    Incorporate Butter into Dough

    Once the dough has risen, turn it out onto a floured surface and roll it out into a large rectangle. Place the butter layer in the center and fold the dough over it, encasing the butter. Seal the edges.

    Laminate the Dough

    Roll the dough out again into a large rectangle, then fold it into thirds (like a letter). Wrap the dough in plastic wrap and refrigerate for 30 minutes. Repeat this rolling and folding process two more times for a total of three folds.

Shaping and Frying

    Shape the Cronuts

    After the final fold, roll the dough out to about 1 inch thick. Use a donut cutter to cut out the cronut shapes. Place them on a floured baking sheet and let them rise for another 30 minutes.

    Heat the Oil

    In a deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

    Fry the Cronuts

    Carefully place the risen cronuts into the hot oil, frying for about 2-3 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
