Sushi Rice

Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 1.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and cover for 20 minutes.

    Season the Rice

    In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Cook the Tuna

    Prepare the Tuna

    Season the 6 oz fresh tuna steak on both sides with 1 teaspoon of black pepper and 1 teaspoon of salt.

    Sear the Tuna

    In a skillet, heat 1 tablespoon of sesame oil over medium-high heat. Once hot, sear the tuna steak for about 1-2 minutes on each side, or until a crust forms but the center remains rare. Remove from the skillet and let it rest.

    Slice the Tuna

    Using a sharp knife, slice the seared tuna into thin strips for sushi assembly.

Assemble the Sushi

    Prepare the Nori

    Lay a sheet of nori on a bamboo sushi mat or clean surface, shiny side down.

    Add Sushi Rice

    With wet hands, take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge.

    Add Tuna and Wasabi

    Place a few slices of the seared tuna in the center of the rice. Add a small amount of wasabi on top of the tuna.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently to keep it tight. Moisten the top edge of the nori with water to seal the roll.

    Cut and Serve

    With a sharp knife, slice the sushi roll into 2 pieces. Serve with soy sauce and pickled ginger on the side.
