Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (about 110°F) with sugar and yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until it is smooth and elastic. Form it into a ball.

    Let Dough Rise

    Place the dough ball in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Broccoli Rabe

    While the dough is rising, trim the ends of the broccoli rabe and blanch it in boiling water for 2-3 minutes. Drain and shock in cold water. Chop into bite-sized pieces.

    Cook Sausage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Remove sausage from casing and crumble it into the skillet. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat.

Assembling Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat as well.

    Shape Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a 12-inch circle or stretch it by hand.

    Add Toppings

    Transfer the rolled-out dough onto a pizza peel or baking sheet. Layer the cooked sausage, chopped broccoli rabe, and shredded scamorza cheese evenly over the dough. Drizzle chili crisp on top.

    Bake Pizza

    Slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes until the crust is golden brown and the cheese is melted and bubbly.

    Serve

    Remove the pizza from the oven, let it cool for a couple of minutes, slice it up, and serve hot!
