    Prepare the Fillings

    If using optional fillings, prepare them first. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced bell pepper, red onion, and jalapeño. Sauté until softened, about 5 minutes. Season with salt, black pepper, cumin, and chili powder. Remove from heat and set aside.

    Assemble the Quesadilla

    On a clean surface, place one flour tortilla. Evenly sprinkle 1/2 cup of cheddar cheese, 1/4 cup of Monterey Jack cheese, and any optional fillings (like shredded chicken and sautéed vegetables) over half of the tortilla. Top with another 1/2 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese.

    Cook the Quesadilla

    In the same skillet, add another tablespoon of olive oil over medium heat. Carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes until the bottom is golden brown and the cheese has started to melt. Flip the quesadilla carefully and cook for another 3-4 minutes on the other side.

    Once cooked, remove the quesadilla from the skillet and let it sit for a minute. Use a sharp knife or pizza cutter to slice into wedges. Serve warm with your choice of salsa, sour cream, or guacamole.
