Preparation

    Cook the Chicken

    In a skillet over medium heat, cook the chicken breast for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest before slicing.

    Cook the Rice

    If not already cooked, prepare the rice according to package directions. You should have about 1 cup of cooked rice.

    Prepare the Vegetables

    While the chicken and rice are cooking, chop the lettuce, cucumber, red onion, tomato, and peppadew peppers.

    Prepare the Egg

    Hard-boil the egg by placing it in a pot of boiling water for about 9-12 minutes. Once cooked, cool it under cold water, peel, and slice.

Dressing

    Make the Vinaigrette

    In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and black pepper until well combined.

Assembly

    Assemble the Powerflex Bowl

    In a large bowl, layer the cooked rice at the bottom, followed by the sliced chicken, lettuce, cucumber, red onion, tomato, and peppadew peppers. Top with the sliced hard-boiled egg.

    Dress the Salad

    Drizzle the lemon citrus vinaigrette over the assembled bowl and toss gently to combine all ingredients.
