    Prepare the Pork

    In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add the pork shoulder to the pot, browning it on all sides. This should take about 10 minutes. Then, add diced poblano peppers, diced tomatoes, oregano, cumin, salt, and black pepper.

    Simmer

    Pour in enough water to cover the pork, bring it to a boil, then reduce the heat to low. Cover and let it simmer for about 2 hours or until the pork is tender and easily shredded.

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and stir to combine it with the sauce. Let it simmer for an additional 10 minutes.

    In a separate skillet, warm the corn tortillas over medium heat until pliable, about 30 seconds on each side.
